Cá Lóc Um Chuối (Braised Snakehead Fish with Green Banana)




Ingredients


700g Snakehead fish (Catfish works well as a substitute)

4 green bananas

2 Tbsp Fish sauce

2 tsp Cracked Black Pepper

1 Tbsp Minced Shallots

1 tsp salt

1 tsp sugar

2 Tbsp Fresh Turmeric – minced

½ White onion sliced into thin rings

50g minced fresh garlic

100g Chopped Coriander

100g Chopped Spring onion

500g Rice Noodles – cooked as per instructions.

1 Red chili – chopped



Clean fish, gut scale and wash thoroughly. Then, cut the fish into 3cm ring sized pieces.

Marinate the fish with a tablespoon of minced shallot, a teaspoon of salt, 1 Tbsp of fish sauce, 2 tsp pepper, 1 tsp salt, 1 tsp sugar, and 2 tablespoons of minced turmeric, for about 30 minutes for the fish to absorb the spices.

Leave skin on bananas and cut it into 3cm ring pieces and then soak it in diluted lemon juice so that the banana does not darken

Sauté chopped onion and garlic, then add the marinated fish and sauté for about 5 minutes, then add the bananas.

Then, add 600ml of boiling water and add a few slices of chopped chili to make the fish soup spicy, continue to cook until the fish broth has reduced to half and the bananas are ripe. Taste and seasoning to taste and add coriander, finely chopped scallions to bring up the aroma. Serve with rice noodles.
