Traditional Vietnamese Recipe - Bún Bò Xào Nam Bộ (Southern Fried Beef Noodles)
250g Beef eye fillet/sirloin
3Tbs Minced garlic
2 Tbs Minced Shallots
1 Tbs Minced Lemongrass
1 Tsp Sugar
1 Tbs Soy Sauce
1 Tbs Oyster Sauce
1 Tsp Sesame Oil
100g of Mixed Vietnamese green herbs – Basil, coriander, mint, lettuce
50g Bean Shoots
40g Roasted peanuts
30g Fried Shallots
100g Pickled Shredded Carrots and Papaya
1 Packet of thin rice noodles cooked as per instructions
2 Tbs Fish sauce
1 ½ Tbs Sugar
2 Tabs Water
1 Tbs vinegar
1 red Chili chopped
2 Garlic cloves minced
Thinly slice beef along the grain lengthwise into 2 to 2 1/2 inch strips. Combine beef strips with minced garlic, minced shallots, lemongrass, soy sauce, sesame oil, oyster sauce and let marinate for at least 15" before cooking.
Prepare a platter of vegetables, thinly slice long strips of cucumber, lettuce, chopped herbs as you like, raw bean sprouts.
Heat oil in a pan, then add the meat and sauté over medium-high heat until cooked medium.
Mix fish sauce, sugar, water, vinegar, then add the minced garlic and chili.
To serve, place rice noodles in a serving bowl, Arrange vegetables and pickles on top, then stir-fried meat, and finally peanuts and fried shallots.
Before serving, sprinkle with fish sauce to taste.
