Traditional Vietnamese Recipe - Bột chiên (Fried Rice Flour Cake)

Ingredients

300g of uncooked Rice

200g Cold cooked Rice

50g Tapioca flour

4 eggs

5 Stalks of Spring onion chopped

3 Tbsp Cooking oil

1 Tsp Salt


Instructions

Wash uncooked rice and soak it for about 8 hours or overnight.

Drain the water from soaking the rice, and place the rice in the food processor along with cold cooked rice, and 600ml of filtered water, press the mill at medium power for about 2-3 minutes until the rice is pureed fine.


Place a fine wire mesh sieve over a medium bowl and pour rice mixture through to remove and solids.

Add the tapioca flour, and 1 teaspoon of salt, use a spoon to stir the mixture until well combined.


Prepare a oven proof rectangle cake tray or a rectangle silicon mold that will fit into your double steamer (Approximately 12cm x 5cm x 3cm deep). Oil the mold lightly and add the flour mixture to the mold. Place mold into your steamer and steam for 45 minutes until the dough is cooked and is firm.

When the dough is cooked, let it cool and put it in the refrigerator for about 6 hours.

Next, take out the dough tray from the refrigerator, turn it over on a cutting board and cut it into bite-sized pieces about 2 cm x 2cm squares


Place a frying pan on the stove on medium heat, add 2.5 tablespoons of cooking oil to the pan, wait until the oil is hot, add the fried flour and fry for about 5 minutes until golden on both sides, then remove and drain the oil.


In a medium bowl combine 4 eggs, and the spring onions and stir well.


Then you drain off the oil in the pan and then put it back on the stove on medium heat, put 1/4 part of the fried dough into the pan, pour 1/4 part of the onion egg over the dough.


Cook for 1-2 minutes and then turn flip the dough/egg omelet , then cook for another 1 - 2 minutes, then turn off the heat. Remove omelet to a serving plate. Serve with the fried dough dipping sauce below, and pickled carrots and papaya recipe below.


Fried dough dipping sauce

Ingredients

1 Carrots

¼ Green papaya

2 red chili

2 Tbsp Coconut water

4 Tbsp Soy sauce

2 Tbsp Rice vinegar

1 Tbsp Chili sauce

4 Tbsp Sugar

½ Tsp Salt

Instructions

Wash your chili, remove the stem and chop finely.

Papaya and carrots you peel, wash thoroughly, drain, then grate finely and separate each type.

Make soy sauce

You put in a bowl 4 tablespoons soy sauce, 4 tablespoons sugar, 2 tablespoons coconut water, 4 tablespoons filtered water and stir well.


Then you put the pot on the stove on medium heat, wait until the pot is hot, add the mixed soy sauce mixture to boil.


When the soy sauce mixture is just boiling, add 2 tablespoons of rice vinegar, 1/2 teaspoon of salt and stir well, remove from heat add 1 red chili finely minced. Allow sauce to cool before serving.

To Serve

Put the fried dough on a plate , add grated papaya, grated carrots, add 1 tablespoon of chili sauce to the bowl of fried flour dipping sauce and you can enjoy it. The part of fried papaya carrot powder is colorful, fragrant and very attractive.
