Traditional Vietnamese Recipe - Tai Mui Nướng (Grilled Crispy Pigs Ears)

Ingredients

4 Pig ears 4 pieces

2Tbsp Vietnamese Sa Tế ( Vietnamese sate sauce is a spicy and flavorful condiment of garlic, lemongrass, and shallots. Available from good Asian stores, or you can make your own)

3 Tbsp Soy sauce

1 Tbsp Five spice powder

2 Tbsp Minced shallots

2 Tbsp Minced garlic

Oyster oil 1 tbsp

Cashew oil 2 tablespoons

Cooking oil 1 tbsp

Vinegar 100 ml

1 Tsp Salt

1 Tbsp pepper

1 Tsp stock powder

2 tomatoes

4 cucumbers

Vegetable side dishes 200 gr

(lettuce/ lettuce/ basil)





Instructions

Soak the pig's ears with a mixture of salt water and vinegar for 5-10 minutes, then take them out and rinse with water, drain.


After washing the pig's ears, use a sharp knife to scour the outside of the pigs ear so that when marinating it penetrates faster and more evenly.


In a large bowl, add minced garlic, minced shallot with 1 tablespoon five spices, 2 tablespoons satay , 3 tablespoons soy sauce, 1 tablespoon pepper, 1 teaspoon seasoning, 2 tablespoons soup cashew oil , 1 tablespoon oyster sauce and 1 tablespoon oil in a large bowl and mix well to combine.


Next, you put the pig's ears in the sauce mixture, wear gloves and squeeze the pig's ears, then cover the mouth of the bowl with plastic wrap. Let stand for 2 hours for the pig's ears to absorb the seasoning.

Wash tomatoes and cucumbers, drain and cut into thin slices.


To grill meat, you need to preheat a gas or charcoal bbq.

Use bamboo skewers to skewer the pigs ear flat, then place the pigs ears in a Vietnamese Stainless Steel wire grill cage.

Place the wire rack on the on the grill, and keep turning the pigs ear until crispy, crunchy and golden.

Once Cooked cut into strips and serve with platter of vegetables, and rice paper to roll into fresh rice paper rolls, or just enjoy as a snack with cold beers.


Notes

To make the barbecue more delicious and fragrant, you should use charcoal to grill.

During the baking process, you can use a brush to brush the marinade on the pig's ears for a richer and more beautiful dish.

If you do not have a charcoal stove, you can grill the pig's ears in the oven . First, preheat the oven to 160 degrees Celsius for 10 minutes. Then you put the pig's ears on a baking tray or griddle and put it in the oven. Bake the pork ears in the oven for 20 - 25 minutes at 150 - 160 degrees Celsius.
