Vietnamese Traditional Recipe - Vietnamese Dipping Sauces & Marinades.

FISH SAUCE DIPPING SAUCE (NUOC MAM CHAM)

Vietnamese Fish Sauce Dipping Sauce (Nuoc Mam Cham) is called the “awesome sauce” and every family has a unique recipe. I’ve had many versions of this quintessential dipping sauce and found that everyone likes this special fish sauce mixture a different way. There are variations to the acids used from different vinegars (distilled, rice wine, etc.) to lime or lemon juice. Different brands of fish sauce have varying intensities and some recipes combine multiple types of fish sauce for a truly potent punch. Sugar levels also vary greatly with the recipes ranging from super sweet to make-your-face-pucker tart. So I’d like to just say, there’s no wrong way to make this dipping sauce as long as you love the taste! This Fish Sauce Dipping Sauce recipe is my family’s recipe and we prefer it on the milder and sweeter side–we don’t use as much fish sauce as some of the other recipes. You can easily adjust this recipe to suit your taste buds. Make it as robust as you dare! Enjoy!

Ingredients

1 cup water

1/2 cup sugar

1/2 cup lime juice or vinegar

1/4 cup fish sauce

2 Tbsp finely chopped garlic

2 finely chopped small red chilies

Instructions

In a small bowl, combine together the water, sugar, lime juice, fish sauce, chopped garlic and chilies until the sugar is dissolved.

Serve the Fish Sauce Dipping Sauce alongside your favorite dishes.


SOY CHILLI GARLIC DIPPING SAUCE (XI DAU OT)

Ingredients

Soy sauce 4 tbsp

White sugar 1 tbsp

1 Red Chili

Garlic 2 cloves

Instructions

Dissolve 4 tablespoons of soy sauce with 1 tablespoon of white sugar in a small bowl.

Add finely diced garlic and sliced chili to mixture and stir.



PEANUT DIPPING SAUCE(NUOC CHAM HOI SIN)

Ingredients:

4 tablespoons of Hoisin sauce

1 tablespoon of peanut butter

4 tablespoons of apple cider vinegar

1/4 cup warm water

1 tsp. sugar

1 tablespoon roasted peanuts, crushed.



GINGER DIPPING SAUCE(NUOC MAM GUNG)

Ginger fish sauce is a common dipping sauce , almost the soul of many delicious dishes, including boiled snails, stuffed snails or duck porridge, duck salad ... Each person will have a unique way to make ginger fish sauce own yourself. Cooky's traditional way of mixing ginger fish sauce will bring a strong flavor, full of love of that mother.

Ingredients:

Ginger 50 gr

Juice of ½ Lime.

Garlic 4 cloves

White sugar 70g

Fish sauce 4 tbsp

Red Chili 2

Instructions

In a Mortar place, 50gr Ginger (skin removed and finely sliced), 2 chili’s and 4 cloves of garlic.

Crush ingredients until combined and mixture is finely crushed, remove from mortar and place ingredients into a small bowl.

Add fish sauce and mix until well combined.

Add lime juice and mix well.


BUN CHA DIPPING SAUCE(NUOC CHAM BUN CHA)

Bun Cha sauce is an important and indispensable component in each bun cha. So many restaurants have their own special recipes for making bun cha , even heirloom and have attracted a lot of customers.

1 part fish sauce.

1 part sugar.

1 part fresh vinegar or lemon juice.

5 parts water.

Garlic and chili.

VEGAN DIPPING SAUCE(NUOC CHAM CHAY)

There are many recipes for making vegetarian fish sauce, but now Cooky will introduce you to a completely new recipe, the secret is to use carbonated soft drinks to create a sweet taste for vegetarian fish sauce, with flavors and colors. quite similar to salty fish sauce. Add a little soy sauce, salt, chili and lemon will help you have 1 cup of delicious vegetarian fish sauce served with wet cakes, very attractive noodles.


Ingredients:

1 pineapple

Sugar

soy sauce

salt

water


Instructions

Pineapple peeled, peeled pineapple eyes, chopped, minced.


Then put the pineapple in a sauté pan for about 3 minutes, then add 1 liter of water,

Add 60 gr salt, 120 gr sugar, 20 ml of soy sauce, boil for about 1 hour.

Remove any foam and filter through a fine strainer, then boil again and then turn off the heat to cool.

Store in bottles and jars to a dry place, when eating poured into a cup, add a few slices of chili if you eat spicy offline.


LIME SALT AND CHILLI DIPPING SAUCE (MUOI CHANH OT)


Ingredients:

Juice of 1 Lime

Salt 1 teaspoons

White sugar 1 / 2 teaspoon

MSG 1 / 3 teaspoon

Green Chili 1

Instructions:

Combine all ingredients in bowl and serve with chicken or fish dishes, or grilled seafood.
